Veg taco ingredients 

  1. 1 cup kidney beans or rajma
  2. Tomato Salsa
  3. 3 ears of fresh corn
  4. ¼ cup chopped grilled onion
  5. ½ cup halved or quartered cherry tomatoes
  6. ½ cup chopped cilantro
  7. ½ cup crumbled feta cheese
  8. 8 to 10 corn tortillas
  9. Sea salt and freshly ground black pepper
  10. 1 red pepper, sliced (optional)
  11. 1 teaspoon extra-virgin olive oil
  12. Juice of 1 lime

Veg tacos recipe

  1. Prepare the french beans by blanching them in salted boiling water for 2 minutes. Shock them in ice-cold water immediately to prevent overcooking. Once cool, transfer to a towel to dry and set aside.
  2. Prepare the salsa by mixing finely chopped tomatoes, onions, cilantro, and green chillies. Squeeze in the lime juice and season with salt and pepper.
  3. It’s now time to make the veg taco filling. Grill the beans and the corn on an open flame until it is nicely and evenly charred. You can use a stovetop mesh grill for this process.
  4. Chop the green beans into pieces and toss them together with the chopped onion and tomatoes. Slice the kernels off the corn and add those to the bowl as well. 
  5. To this bowl of taco filling itself, add the olive oil, lime juice, cilantro, pinches of salt and pepper, and a few spoonfuls of the tomatillo salsa and toss. Season to taste.
