  1. Ensure your paneer is fresh and soft. If you can make the paneer for the paneer paratha masala at home by splitting milk and draining the milk solids overnight- nothing like it! Even if not, buy dairy-fresh malai paneer instead of frozen paneer for this paneer paratha recipe.

  1. 200 grams paneer
  2. 1 onion finely chopped

  4. 1 inch ginger finely chopped
  5. ½ teaspoon salt
  6. 1 teaspoon cumin powder
  7. 1 teaspoon amchur powder
  8. ½ teaspoon garam masala powder
  9. Coriander Leaves - Chopped
  10. Ghee

For the paneer paratha dough:

  1. Wheat flour - 2 Cups
  2. Salt - ¼  teaspoon
  3. Oil
  4. Water for kneading the dough

For serving

  1. A bowl of curd
  2. Pickle of your choice
  3. Butter/ghee (optional)
  4. Green chutney (optional)

Paneer paratha recipe

  1. In a bowl, grate the paneer and mix all the ingredients for paneer paratha masala. Grate the paneer gently to avoid wastage. Keep this aside. 
  2. Mix wheat flour, oil, salt and water and knead it for 10 minutes to get a soft dough. Let it sit for 30 mins.
  3. Divide the well-rested dough into equal-sized dough balls. Flatten the dough ball and place the filling in the centre. 
  4. Fold to cover the filling with dough from all sides. Pinch off the excess dough. You should have an evenly filled dough ball to ensure your paneer-stuffed paratha cooks well.
  5. Flatten the paratha dough and roll it out using a rolling pin. Use enough flour to dust the counter or rolling surface to ensure the paneer paratha does not stick.
  6. Heat an iron tawa until it is evenly hot. Place the rolled-out parathas onto the hot tawa. Let it cook and puff up slightly.
  7. Flip the paratha once it is cooked on one side. Rub some oil/ghee on the edges and cook on both sides till they turn golden
  8. Serve the paneer paratha hot. For a dhaba-style paneer paratha, top it off with a dollop of butter or ghee and pair it with curd, pickle or green chutney.
