A favourite tea-time snack for the South Indians, preparing nippattu at home is a rather simple and easy process. Nippattus are flat disc like chaklis, which are deep fried rice crackers. Nippattu recipe also includes nippattu ingredients such as peanuts, dried coconut, fried gram and sesame seeds. Aromatic as well as delicious, nippattu has a light crunch to them. Nippattu ingredients

  1. 1 cup rice flour
  2. 2 tbsp maida
  3. 1 tbsp fine semolina
  4. ¼ cup fried gram
  5. ¼ cup peanuts, lightly roasted
  6. 2 tbsp dry coconut
  7. 2 tbsp fresh curry leaves, finely chopped
  8. 1 tsp red chilli powder
  9. ¼ tsp hing
  10. ½ tbsp hot oil
  11. Peanut oil
  12. Salt to taste
  13. Water

Steps to follow for nippattu recipe

  1. Add the fried gram and peanuts to a blender and coarsely grind them.
  2. In a mixing bowl add the rice flour, maida, semolina, chilli powder, hing and chopped curry leaves, along with salt as required. 
  3. In the same bowl then add the coarsely grinded peanuts and gram mixture, along with the dried coconut. 
  4. Mix all the ingredients well with hot oil. 
  5. Add water in intervals to bring the dough together.
  6. Knead the dough until it turns firm.
  7. Make small balls out of the dough, and roll them out as thin as possible in a parchment paper.
  8. Heat peanut oil in a frying pan on medium flame and let it turn hot. 
  9. Carefully remove the nippattu from the parchment paper and drop them in the hot oil carefully. 
  10. Fry 2-3 nippattus at a time. 
  11. Cook the nippattus well on both sides until they turn golden brown and bubbles start to rise from the oil. 
  12. Once cooked, remove the nippattus from the oil, and drain out the excess oil in a kitchen tissue. 
  13. Bring the nippattus to room temperature and serve.

Pro tip: You can add sesame seeds to your nippattu recipe for a more aromatic snack.
