Fafda Feast with Besan Sauce and Jaggery Caramelized Mango

This is my innovative gujrati recipe with besan. Explore the burst of flavours in every bite. Elements of my dish are: Fafda beetroot paneer roulade, besan sauce, Jaggery caramelized mango and fafda tuile.

INGREDIENTS

  • 1 cup+ 3 tbsp, Besan
  • ½ cup Paneer
  • ¼ cup Beetroot
  • ½ tsp Turmeric powder
  • ½ tsp Chilli powder
  • ½ tsp Black pepper
  • ¼ tsp Ginger paste
  • ⅕ tsp Mustard seeds
  • A pinch Hing
  • 1, Green Chilli
  • 1 cup, Raw Mango
  • ½ cup, Jaggery
  • Few Coriander leaves
  • Salt to taste
  • 2 ½ tbsp oil
  • Water as required

PREPARATION

    In a mixing bowl, take 1 cup besan, a pinch of turmeric powder, ¼ tsp chilli powder, ¼ tsp black pepper, salt, chopped coriander leaves and chopped green chilli.

    Blend everything into thick lump free batter. Keep aside for 10 minutes. Add more water to adjust the consistency.

    For the filling, heat oil in a pan and add grated beetroot. Stir it well with salt and a pinch of black pepper powder. Take out in a bowl.

    Crumble the paneer and add salt and black pepper. Mix it properly and keep aside.

    Heat a non-stick pan and drizzle some oil, pour a ladle full of besan batter.
  6. 6

    Fill the centre with the beet root mixture and paneer mixture. Roll it nicely and cook till it's done. Take it out on a plate.

    Now to make besan sauce, take 2 tbsp besan in a bowl and mix with water. Whisk it properly to make it lump free. Keep it aside.

    Heat ½ tbsp oil in a pan and crackle mustard seeds. Add hing, ginger paste, a pinch of turmeric powder and ¼ tsp chilli powder.

    Whisk it together and then add salt. Stir it properly. The mixture will start to thicken after 3 to 4 minutes.

    Adjust the consistency. Besan sauce is ready.

    To make tangy jaggery caramelized mango, heat ½ tbsp of oil in a pan and add chopped mangoes, cut in wedges.

    Add ⅛ tsp turmeric powder, ¼ tsp chilli powder, salt and ¼ tsp black pepper powder. Cook for a few minutes until the mangoes become soft.

    Add chopped or powdered jaggery and cook until it gets caramelized.

    To make the tuile, add 1 tbsp besan and water. Mix well. Heat ½ tbsp of oil in a pan and add the flour mixture. Take out this tuile carefully and drain out excess oil in a paper towel.

    Now to assemble, first spread the besan sauce on the centre of the plate. Then, cut the fafda roulade into two parts and place it over the sauce.

    Garnish it with besan tuile and tangy jaggery caramelized mango. Enjoy!!.
