Chicken Popcorn

Chicken Popcorns are yummy, crispy deep-fried balls of chicken. Chef Ajay Chopra brings the recipe of this bite-sized finger food to your kitchen.

Ingredients

  • For the chicken

    • 500 gm diced chicken breast

    • 1 tbsp msutard paste

    • 1 tbsp cider vinegar

    • 1 tsp black pepper

    • salt to taste

    • 1 tbsp onion powder

    • ½ tbsp garlic powder

    • 200 ml butter milk

  • For Seasoned Flour

    • ½ cup corn flour

    • ½ cup refined flour (maida)

    • 1 tsp salt

    • 1 tbsp paprika

    • 1 tsp black pepper

  • For Cajun Spice

    • 1 tbsp oregano

    • ½ tbsp thyme

    • 1 tsp sweet paprika

    • 1 tsp black pepper

    • 1 tbsp chilli flakes

    • 1 tsp sugar

    • ¼ tsp citric acid

    • 1 tbsp garlic powder

    • 1 tbsp onion powder

    • 1 tbsp salt

    • 1 tbsp cumin powder

PREPARATION

    Dice the boneless chicken. For the marination, add mustard paste in the chicken, followed by cider vinegar, Black pepper, salt as per taste, onion powder, garlic powder and buttermilk. Let the chicken rest in marination for an hour.

    For the seasoned flour, mix corn flour, refined flour, salt, black pepper and paprika.

    For the Cajun spice in the blender jar add oregano, thyme, sweet paprika, black pepper, chilli flakes, sugar, citric acid, garlic powder, onions powder, salt and cumin powder. Blend all the ingredients together to make Cajun spice mix.

    Remove chicken from the marinade and coat it in the seasoned flour.

    Dust all the extra flour from the chicken and drop them in cold chilled ice water for a few seconds.

    Coat the chicken again with seasoned flour and drop the pieces in medium hot oil.

    Fry Chicken pieces till golden brown. Remove chicken from the kadhai and then re-fry them when ready to eat.

    Once it is out of the kadhai add Cajun spice to the meal.

    Serve Chicken Popcorn hot.
