Ingredients

  • For Medu Vada

    • 1 1/2 cups soaked urad dal

    • water as required

    • 1 tsp mustard seeds

    • 7-8 curry leaves

    • 1 tbsp coconut shavings

    • 1/2 tbsp chopped ginger

    • 1 tbsp chopped coriander leaves

    • 1 tsp asafoetida

    • salt to taste

    • 1 tbsp semolina

    • oil for frying

  • For the Filling

    • 2-3 tbsp oil

    • 1/4 cup sliced onion

    • 1 cup boiled noodles

    • 1 1/2 tbsp Schezwan chutney

    • salt to taste

  • For Serving

    • potato sabzi

    • tomato ketchup

  • For Garnish

    • grated cheese

    • fried noodles

    • chopped corinader leaves

PREPARATION

    In a mixer jar, grind the soaked urad dal with water to make a smooth paste.

    Transfer this paste to a bowl and add mustard seeds, curry leaves, coconut shavings, ginger, garlic, coriander leaves and mix well. Now add asafoetida, salt, semolina and mix well till you get the consistency of a thick dough.

    Now make balls of this dough, shape them like a medu vada and deep-fry in oil till golden brown.

    To make the filling, heat oil in a pan and add onions, boiled noodles, Schezwan chutney, salt and mix well.

    Slice the medu vada into half. Top one half with potato sabzi, noodles filling and tomato ketchup. Put the other half of medu vada on it.

    Garnish with grated cheese, fried noodles and chopped coriander leaves.
