Barfis are a popular Indian dessert. With a fudge-like texture, besan ki barfi is prepared from besan, which is gram flour, along with sugar, cardamom powder and ghee. Cut into rectangles or squares, and garnished with nuts or dry fruits, besan barfi is an absolute mouth melting dessert. To prepare besan burfi recipe, it is extremely important to understand the consistency of the ingredients and get them in the right amounts. An otherwise simple dessert to prepare which is truly a delight, besan barfi can be prepared with very basic elements that make up a delicious sweet dish.

Besan ki barfi and besan ladoo are prepared almost along the same lines, with the use of similar ingredients. However, there is a basic difference in the shape of both the recipes. Ladoos are round in shape, with a ball-like structure, whereas barfis can be rectangular or square in shape. Moreover, there is also a difference in the techniques used in the besan barfi recipe and that of besan ladoo.

You will require the following besan barfi ingredients to prepare besan barfi at home:

  1. 2 cups of besan or gram flour
  2. 1 cup mawa
  3. 1 cup ghee
  4. 1 and ½ cups of sugar
  5. ½ tsp cardamom powder
  6. A pinch of saffron food colour
  7. ¾ cups of water

Follow the given step by step instructions to prepare delicious homemade besan ki barfi:

  1. To prepare the besan burfi recipe, first heat one cup of ghee in a pan along with 2 cups of besan. 
  2. Roast the besan and the ghee until the besan starts to turn golden brown in colour and begins to give out an aroma. Continue to roast these ingredients on low flame for about 20 minutes.
  3. Once the besan has been cooked well, add in one cup of mawa. 
  4. Cook all the besan barfi ingredients in the pan until the ghee begins to release from the mixture. Once cooked, keep aside the mixture.
  5. In a large pan, add in the sugar as mentioned under the ingredients list along with water, and let the sugar boil until it reaches a string-like consistency.
  6. Add in a few drops of the saffron food colour in the sugar syrup, along with ½ tsp of cardamom powder. 
  7. Now add in the besan and mawa mixture to the sugar syrup in the pan and mix well. 
  8. Continue to cook the mixture on low flame, until it turns silky smooth in texture. Remember to stir continuously so that the mixture doesn't stick to the pan. 
  9. Once the besan barfi mixture has reached the desired consistency, transfer it to a tray lined with baking paper. Garnish with your choice of nuts and let it rest for an hour. 
  10. Thereafter, cut the besan barfi into rectangles or squares and serve.

Pro tip: It is very important to roast the besan well in the recipe in order to avoid a raw taste of the besan in the besan barfi.
