INGREDIENTS
For Kuttu Khichadi
2-3 tsp ghee
1/4 tsp asafoetida
1 tbsp cumin seeds
1 peeled & chopped potato
1 tsp finely chopped ginger
1 cup soaked buckwheat
rock salt to taste
water as required
For Cucumber raita
2 cups curd
pinch of roasted cumin powder
pinch of black pepper powder
1 peeled & chopped cucumber
freshly chopped coriander leaves
PREPARATION
- Wash and soak 1 cup of buckwheat in water for 3 to 4 hours.

- In a pan, heat a spoonful of ghee and add 1/4 tsp asafoetida & 1 tbsp cumin seeds. when seeds start to crackle, add 1 peeled & chopped potato, grated ginger and give a stir.

- Drain the water from soaked buckwheat, add it to the mixture in pan along with a pinch of rock salt to taste and stir for few seconds.

- Add water as required and let it cook on a medium flame for 10- 15 minutes till it simmers.

- Add black pepper powder and garnish it with coriander.

- Peel and finely chop a cucumber. In a bowl, beat the curd till smooth.

- Add rock salt to taste, pinch of roasted cumin powder, black pepper powder. add the peeled & chopped cucumber to 2 cups of curd and mix it.

- Cucumber raita is ready. Serve Kuttu ki khichdi with cucumber raita.
