Ingredients For Suran Ki Sabzi with Jowar Roti Recipe

  • For Suran Ki Sabzi

    • 2 cups diced elephant foot yam

    • water as required

    • rock salt to taste

    • 1 tbsp ghee

    • 1 black cardamom

    • 6-7 cloves

    • 3-4 green cardamom

    • 1 tsp chopped ginger

    • 1 tsp turmeric powder

    • 1 tsp coriander powder

    • 1/2 cup curd

    • rock salt to taste

    • 1 cup mashed tomato

    • 1/2 cup green peas

    • water as required

    • freshly chopped coriander leaves

  • For Jowar Roti

    • 1 cup sorghum flour

    • pinch of rock salt

    • water as required

    • 1-2 tsp ghee

How to make Suran Ki Sabzi with Jowar Roti Recipe?

  1. Chop the elephant foot yam (suran) into small cubes and add it to a pressure cooker along with rock salt and water as required. Pressure cook for 1 whistle and turn off the heat. allow the pressure to release naturally.
  2. Heat a saucepan with 2 tbsp ghee, add black cardamom, cloves, green cardamom, and 1 tsp grated ginger, 1 tsp turmeric powder and 1 tsp coriander powder.
  3. Add ½ cup curd and mix. Add rock salt as per taste and add 1 cup mashed tomato and let it cook.
  4. Remove the boiled suran from the pressure cooker, drain the excess water and let it cool for 4-5 mins until it turns hard.
  5. Add the cooked suran cubes, ½ cup green peas and water as required in the masala mixture, brisk boil for a few minutes and turn off the heat. Garnish it with coriander leaves.
  6. In a large platter, add 1 cup of sorghum flour, a pinch of rock salt, water and mix it with the flour. Knead it to make a tight dough.
  7. Cut out small balls from the dough and flatten it evenly with palms.
  8. Heat a flat pan and place the roti on the pan and roast it from both sides.
  9. Sprinkle 1-2 tsp ghee to moisten the roti. jowar roti is ready. now serve suran ki sabzi with jowar roti.
