<p>If there is one category that is showing a rapid growth in the alco-bev sector, it is hard seltzers. Who would not want to get buzzed, in the Indian summer, with a chilled can of alcohol, which is low on calories and high on flavour and freshness? The alcoholic carbonated water-based drink that swept over the US sometime in 2016, has made in-roads in the Indian market with around multiple brands competing for consumer attention. According to Statista, the market for hard seltzer is expected to show a volume growth of 62.3 per cent in 2024.</p><p>So, what is hard seltzer and why is it making such a buzz, especially with the youth? Essentially, hard seltzers are carbonated water with alcohol and some flavours. Not only are they a refreshing alternative to beers and aerated drinks, but they are also low on calories, low on alcohol content – it usually varies between four to eight per cent – and are gluten-free and vegan as well, making them a great choice for health-conscious consumers.</p><p>One of the newest entrants in the category is Spyk hard seltzer which was launched early this year. Vimal Chand, CEO and co-founder of the company says, “With more than 50 per cent of India’s population being under 35, we saw the immense potential for a truly millennial product. We’ve created a drink that’s for everyone, for every occasion, a drink that adapts itself to you, whether you’re someone who lives to drink or someone who only enjoys the occasional sip. Simply put, we make sure that an exciting night on the town isn’t followed by a regretful morning after.” The immense scope for its growth compelled Ruchi Gupta and Gaurav Sharma to come up with Raya hard seltzers in 2021. “India stands third with respect to the entire seltzer segment around the world and is progressing day by day,” Gupta informs us.</p><p>With easy drinking being the keyword, and the hot summers calling for something refreshing without leaving us feeling guilty, hard seltzers, indeed, seem to be the way to go (or to drink)! </p><p><strong>Here are seven hard seltzer brands you can try in India:</strong></p><h2>1. With an ABV of 5.5 per cent and zero added sugar, these refreshing and guilt-free beverages are available in four variants namely Lime, Orange, Mixed Berry and Original. Ghatkopar has emerged as a hub for foodies, courtesy of its<i> khau gallis</i> and restaurants that serve an array of traditional and fusion food, and it was about time this vibrant community got a SOCIAL outlet.</p><h2>Inside Ghatkopar SOCIAL</h2><p>The interiors of this SOCIAL outlet pay homage to the legendary Indian painter and artist Raja Ravi Varma (who shares a connection with Ghatkopar) in their own unique way. He is credited with opening the first-ever printing press of India in this area and hence, you can say it is a fitting tribute. Expect glimpses of Raja Ravi Varma’s popular works such as ‘Shakuntala’, ‘The Milkmaid’, ‘A Tamil Lady Playing the Swarbat’, and ‘Woman with Veena’, printed in black-and-white against a vibrant and contemporary backdrop. </p><figure class="image"><img src="https://assets.zeezest.com/images/PROD_ghatkopar_social_2_1686745437912.jpg"></figure><p>What completes the overall experience is a contemporary grunge aesthetic, typical of SOCIAL, lined with neon red and yellow seating. In addition, they have an all-new array of tandoori options including Abra kebab platter, chakori murgh roll, and tandoori pizzas. </p><figure class="media"><oembed url="https://www.instagram.com/p/CtZTfaUgZJr/?hl=en"></oembed></figure><p>We tried the chicken tikka and cheddar pizza, which had a mildly tangy base topped with small succulent pieces of tandoor-grilled chicken and a mild cheddar flavour. Next up was the Chooza 69, which was a let-down because of its saltiness. The idli manchurian (small pieces of fried idli tossed in a desi-Chinese Manchurian sauce) went well with both the drinks we tried, including the Asia Sour (a refreshing concoction made from whisky, kiwi puree, pineapple, rosemary tepache, and basil) and Social Cinema (a cocktail that combines vodka, cold brew, and popcorn syrup, and served with a handful of popcorn).</p><p>The food we tried may not have been SOCIAL’s best, but the outlet has a vast menu, so there’s more than plenty to discover in the next few visits. 5 Gin Cocktails To Beat The Summer Heat

<p>In October 2022, one of India’s foremost distilleries, John Distilleries, launched a premium gin brand in India—Malhar. The distillery is also behind the award-winning whisky brand Paul John Whisky. Available in two variants—classic dry and citrus dry—Malhar gin aims to bring the spotlight on the rich and varied Indian herbs and spices.</p><p>The name, Malhar, finds its root in the eponymous Indian classical raga as well as the season of rain, monsoon, which is also known as <i>malhar</i>. The gin itself is distilled in small batches in a copper pot still, overseen by young distiller, Tanvi Garg, under the watchful tutelage of Michael John, master distiller at John Distilleries.</p><p>At the Paul John Visitor Center in Goa, Garg guides you through the distillation process. Botanicals in a gin are infused in three different ways—maceration, steeping and vapour infusion. The botanicals used in this gin include Indian key lime, juniper, lemon peel, orange peel, grapefruit, orris, angelica, lavender, tea, cardamom and hibiscus.</p><h3>Recipe for Classic Gin Martini</h3><p>1. 75 ml Malhar Classic gin</p><p>2. 15 ml dry vermouth</p><p>3. 1 dash of orange bitters</p><p>In a mixing glass, filled with ice, pour the ingredients. <p>If you’re the food lover you claim to be, then you must surely have dined at The Bombay Canteen once. Helmed by the dynamic and passionate duo, Yash Bhanage and Sameer Seth, the restaurant, located in Mumbai’s Lower Parel, has become a conversation starter when it comes to highlighting local Indian flavours. And just as passionate the two are about food, they are equally serious about the tipples they serve at the bar at The Bombay Canteen. As part of their zeal for a good cocktail, every year since The Bombay Canteen opened its doors in 2015, they curate an annual cocktail menu called the Canteen Cocktail Book, inspired by the whimsies of the financial capital.  </p><h2>The spirit of Bombay in every sip</h2><p>The Canteen Cocktail Book for 2023 is titled ‘Make Mine A Bombay’. At a preview tasting, Bhanage and Prantik Haldar, who heads the bar team at The Bombay Canteen, took over the bar, as the former narrated the tales that led to the creation of this year’s special cocktails, while the latter deftly stirred up the concoctions. </p><figure class="image"><img src="https://assets.zeezest.com/images/PROD_TBCCocktails%283%29_1688098645821.jpg"></figure><p>“While our bar has a unique selection of re-imagined cocktails with firm Indian roots, with every new cocktail menu, we attempt to keep elevating our cocktail philosophy. We are constantly trying to better your cocktail-drinking experience and build and cultivate Mumbai’s cocktail community. The idea is to not just get on to newer drink trends but add to the dining experience of our guests,” explains Bhanage.</p><p>AlsoRead0</p><p>Haldar, along with his team, has created a menu that takes inspiration from quintessentially Bombay things such as the Dadar flower market or the black and yellow taxi popularly known as <i>‘kaali peeli’</i>. </p><figure class="image"><img src="https://assets.zeezest.com/images/PROD_TBCCocktails%282%29_1688098663506.jpg"></figure><p>“This menu is being launched after the pandemic (the fourth edition was launched in November 2019) – the idea is to remind people of the memories and fun moments of the city that have been a part of our lives for many years. We just want to highlight them in a fun and amusing way,” Bhanage says. </p><p>The menu is divided into three styles of cocktails—easy breezy highballs for easy drinking, adventurous cocktails for those looking for a dash of creativity in their drinks and finally stiff-collared cocktails for the serious and intense cocktail purveyors. </p><h2>Cocktails with refreshing dashes of creativity</h2><figure class="image"><img src="https://assets.zeezest.com/images/PROD_TBCCocktails%284%29_1688098687031.jpg"></figure><p>We started off with a refreshing Phool, a gin spritzer with Umeshu and a herbaceous but subtle marigold soda. Nothing gets more local than the use of marigold, and it was the bar team’s effort to replace the now ubiquitous but not indigenous, elderflower, Haldar tells us. </p><p>The other highball was a very refreshing drink that beautifully showcased what one can do with indigenous flavours with just a little restraint and skill. Named Waiting List, after the infamous queues at Matunga’s South Indian eateries, the drink has a coconut fat-washed tequila with curry leaf soda. Mumbai’s coastal connection is reiterated with the use of coconut and curry leaves.</p><figure class="image"><img src="https://assets.zeezest.com/images/PROD_TBCCocktails%281%29_1688098706337.jpg"></figure><p>Things take a serious turn as we try the stiff-collared drinks. Bhanage tells us, these are designed for folks who trudge in at the end of a long workday and just want a strong drink to wash it all away. The Verdict was specifically made for that. It features dark rum amped up by banana sherry and exotic tiki notes. </p><figure class="image"><img src="https://assets.zeezest.com/images/PROD_TBCCocktails%285%29_1688098716967.jpg"></figure><p>But our personal favourite was the Rising Star—a love child of a martini and gimlet is how The Bombay Canteen folks describe it—the use of orange bitters and basil cordial explains that. For us, though, while being a stiff one, the cocktail had the sophistication that often only a well-made gin cocktail can offer.</p><p>The final cocktails at the preview were the adventurous ones—Paparazzi and Rear View. The names don’t get more Bombay—one an ode to the thriving entertainment industry and the other to the public conveyance system. Paparazzi uses rhubarb and cheese as its base flavours. Haldar uses burrata whey from the restaurant’s kitchen and rhubarb cordial to balance a sweet and savoury vodka drink; a grating of Belper Knolle cheese on top adds further intensity. <p>The prestigious Michelin Guide has awarded this Italian chef Young Chef of The Year award in Abu Dhabi last year—Chef Luigi Stinga, chef de cuisine at Talea by Antonio Guida at Emirates Palace Mandarin Oriental, Abu Dhabi. Chef Stinga’s isn’t new to the rigours of running a Michelin star restaurant. Since early days of his career, he has been working with Michelin star restaurants in Italy—Restaurant Quattro Passi, II Pelicano and Eta; and three-Michelin starred Restaurant Piazza Duomo. Chef Stinga then worked with Chef Antonio Guida as sous chef at Mandarin Oriental Milan before his first posting to Southeast Asia. </p><figure class="image"><img src="https://assets.zeezest.com/images/PROD_Chef%20Luigi%20Stinga_1687861220804.jpg"></figure><p>Under the guidance of chef Guida, chef Stinga not only opened Talea’s first international outpost but also got its first Michelin star in mere eight months of its opening in Abu Dhabi. The Italian chef has built a reputation for masterfully making home-style Italian dishes worthy of a gourmet and fine dining establishment. At the same time, he does not want to take away from the essence of the familial approach to food.</p><p>We witnessed Chef Stinga’s food philosophy that celebrates family-style or ‘cucina di famiglia’, at work. Chef Luigi was in Mumbai for a two-day promotion at Vetro, The Oberoi Mumbai, to showcase the best of rustic Italian dishes but with a contemporary twist. From the rustic montanara, which is a deep-fried pizza dough, served with an aromatic tomato sauce to the sharing portion of Milanese chicken cutlet with rocket salad and cherry tomato. The highlight for us was the tableside assembly of the famous Italian dessert, tiramisu. Devoid of the gourmet frills, the tiramisu’s simplicity shined bright. Simple ladyfinger biscuit soaked with coffee, served with a delicious dollop of light and airy sweetened mascarpone, and crushed dark chocolate.</p><p>AlsoRead0</p><p>On his maiden voyage to India’s financial capital, chef Stinga was stunned at the humidity since the monsoon were still a week away but that did nothing to dampen his  excitement, he told us. Here are excerpts of our conversation with him:</p><h2>1. What was the idea behind your ‘cucina di famiglia’ menu for Mumbai?</h2><p>The menu is obviously much smaller than at the restaurant in Abu Dhabi. But I wanted to have all the prominent flavours from my menu. I wanted you to be able to try the bit of everything, a few starters, main courses and desserts. The idea is to give the real taste of Italy.</p><h2>2. How would you describe the real taste of Italy? </h2><p>The kind of food we do is traditional but using clean pure ingredient and amping it up with technique. And even thought the dishes are beautifully plated and modern, the taste will take you back to a home kitchen in Italy.</p><figure class="image"><img src="https://assets.zeezest.com/images/PROD_Don%27t%20crop-DSC05272_1687861235989.jpg"></figure><h2>3. Why is the tiramisu at Talea by Antonio Abu Dhabi so famous?</h2><p>(Laughs) It started out as a joke to do a tableside tiramisu assembly. Then we added it to the restaurant’s experience, when I would go out to the dining room to greet the diners and to check if everything is running fine. We think this tiramisu is doing well, so we’ve kept it.</p><h2>4. Can you take us through the journey of Talea by Antonio winning its Michelin star?</h2><p>We won the Michelin Star in November 2022. All of us at the restaurant are young guys and we all really work hard towards the same goal. While I do give a direction, the whole team has something that drives them to be the best. I think this is a good way to achieve something. Every day we try and push ourselves to improve ourselves even if it is a small thing. We have new ideas every day, some are good and others aren’t but we learn from it. Every small step helps make a change for the better.</p><h2>5. How are you preparing for your second and third Michelin star?</h2><p>The time I heard we got the first Michelin star, I cried like a baby, because it is such an achievement and a dream come true, for any chef. I’ve worked all my life in restaurants, and this was my first star, so it was truly special. But at the same time, every day when I open my restaurant, I don’t think about stars and awards. I think it is important that at every new kitchen, you learn what is the best there is to learn. You also need to know what works for you and the kitchen you want to run because copying does not work. And when you have the chance to work with different people, you take a bit from everyone and evolve your own style.</p><p>AlsoRead1</p><h2>7. How would you describe your style of cooking?</h2><p>Here in Abu Dhabi, when we started the idea was to start with a gourmet restaurant, but we finally sat down for brainstorming we realised that we were missing an Italian restaurant that offered traditional flavours. I think it's important to study and stay relevant because there is a lot of new techniques. To be able to grow, improve and evolve as a chef it is important that one keeps on studying and learning. </p>

The Dragon Boat Festival is widely celebrated in China, Hong Kong, Taiwan, and other regions with Chinese communities. The festival serves as a way to honour Chinese culture, strengthen community bonds, and bring people together in joyful celebrations.</p><figure class="image"><img src="https://assets.zeezest.com/images/PROD_IMG_3670_1687509764899.jpg"></figure><p>While the quintessential Sichuan flavours surely tickled our tastebuds during the preview meal, it was the subtle hot pot style soup, Huo Guo with mushroom, asparagus and fried rice grains, that was a revelation. The little drop of chilli oil acted as a flavour enhancer without being overpowering. <br>The steamed bok choy with infused garlic oil had just the right crunch and was not limp. It may come across as lacklustre but the garlic oil adds an umami boost to crunchy greens. The next highlight was the Alaskan crab served on a bed of egg custard.
