Shakarkandi Chaat

Heat oil in a pan and cook the onions. Now add boiled sweet potatoes and mix well. Next add boiled potato, salt, red chilli powder and mix well.

Transfer this chaat to a bowl and top up with tomatoes, green chilli, coriander leaves, mint chutney, tamarind chutney, onion rings, black salt, chaat masala and a dash of lemon.

Chole Palak Paneer

Heat ghee in a pan and add onions, cumin seeds, cloves, black peppercorns, dried mace, cardamom, black cardamom, bay leaf, cinnamon stick and mix well.

Now add garlic, ginger, dry red chilli and mix well. Next add tomato and spinach puree and mash well. Add dried fenugreek leaves, salt, water, turmeric powder, red chilli powder, tamarind paste and boiled white chickpeas. Mix well and cook for a few minutes.

Heat ghee in a pan and fry the cottage cheese pieces. 

In the same pan, cook the chole palak gravy for a few minutes.

Serve hot with rice and garnish with coriander leaves, ginger juliennes, green chilli and lemon wedge.

In a mixing bowl, mix together minced chicken, onions, ginger, garlic, green chilli, spring onions, soy sauce, coriander leaves and salt.

To make dough, in a mixing bowl mix together all-purpose flour, salt, oil and water. Make a soft dough.

Roll the dough and cut it into two portions with the help of a katori. 

Spread the stuffing on one portion, apply some water on the edges and cover with the other rolled portion. 

Shape it like a gujiya and deep-fry in oil till it becomes golden brown.

Cut the Shapale into half, garnish with spring onion and tomato ketchup.

Katori Chaat & Cone Chaat

Mix together all-purpose flour, oil, salt and water to make a tight dough that will serve as the base for making katori and cone.

Add carom seeds to the dough and knead again.

To make a katori, take a small portion of the dough, roll it and wrap it around a katori (small bowl) to give it the shape of a katori. Remove the excess dough, prick it from all sides and deep-fry the katori till the outer shell turns golden brown. 

Remove the shell from the katori and deep-fry the shell to make it crispy.

To make cone, roll the dough, prick it and cut into thin strips. Make a cone like shape with aluminum foil and wrap then dough strips around this foil. 

Deep-fry this cone till golden brown, remove the foil and deep-fry the cone again.

To make katori chaat, fill the katori with aloo masala, white chickpea masala, chopped tomato, chopped onion, cabbage and top with mint chutney, tamarind chutney, masala peanuts, namkeen, black salt, chaat masala, curd, green chilli, carrot, nylon sev, pomegranate seeds and coriander leaves.

To make cone chaat, fill the cone with aloo masala, white chickpea masala, chopped tomato, chopped onion and masala peanuts. Dip this cone in curd.

Sprinkle the cone with nylon sev, pomegranate seeds, coriander leaves, black salt and chaat masala.

Medu Vada Sandwich

In a mixer jar, grind the soaked urad dal with water to make a smooth paste. 

Transfer this paste to a bowl and add mustard seeds, curry leaves, coconut shavings, ginger, garlic, coriander leaves and mix well. Now add asafoetida, salt, semolina and mix well till you get the consistency of a thick dough.

Now make balls of this dough, shape them like a medu vada and deep-fry in oil till golden brown.

To make the filling, heat oil in a pan and add onions, boiled noodles, Schezwan chutney, salt and mix well.

Slice the medu vada into half. Top one half with potato sabzi, noodles filling and tomato ketchup. Put the other half of medu vada on it.
