For the first round of marination, the chicken lollipop ingredients required are ginger-garlic paste, red chilli paste, chilli vinegar, soy sauce and salt. All these ingredients need to be mixed well in a bowl and left to rest for 15-20 minutes. The chicken pieces dipped in this spice mixture should then be marinated in our second mixture. This includes a combination of rice flour, corn flour, maida, salt, red chilli powder and pepper. Add a little water to this mixture and marinate your chicken drumettes in it. Make sure to make a semi-thick paste. Now, heat the oil in your frying pan and deep fry the lollipops in batches. In case the lollipops lose shape during marination, reshape them before frying. Start by scraping the meat down to have the perfect lollipop shapes. Then marinate your chicken in all the ingredients listed above and let it rest for an hour. Now, heat the oil and fry your chicken till it turns golden brown.
